Stuffed acorn squash

Option 1:


1 acorn squash, cut in half


For stuffing:

1 cup pumpkin flowers, chopped

1 cup marinated artichokes, chopped

1/4 cup sun-dried tomatoes, chopped

1/4 cup hempseed

salt and pepper, to taste


Bake the oven at 350F. Take the halved acorn squash and scrap off half of the flesh inside. Chop the scraped acorn squash flesh and mix it with all the ingredients of the stuffing. Fill the hollows of the acorn squash with the stuffing. Bake for 30-40 minutes until it's cooked.


Option 2:




Stuffing ingredients:


1/2 cup fennel bulb, chopped

1 raw green tomato, chopped

1 tbsp sun-dried tomatoes, chopped

handful asparagus, chopped

1/2 cup chopped radish

scarped acorn squash, chopped


After filling the hollows of the acorn squash, top it with your favorite cheese and bake and Enjoy!
