Root vegetables and Peanut kura

1 cup chopped root vegetables

(rainbow carrots, beetroot etc.)

1/4 cup peanuts

1 tbsp grated coconut(fresh or dry)

1 tbsp chopped onion (non-sathvik, optional)

salt and lemon juice, to taste

1 tbsp oil

pinch of turmeric


Soak peanuts overnight and drain the water out in the morning.


In a pan on medium heat, pour oil and when hot put onion and saute till it turns translucent. Add all the chopped vegetables, soaked peanuts, turmeric and salt and let it cook through. Just before removing the pan from the fire, add the grated coconut and lemon juice. Enjoy!
