Beans and Sprouts Kura

2 cups beans, chopped

1 cup mixed vegetables (rainbow carrots, asparagus and celery) chopped

1/2 cup sprouted mung beans

1 tbsp grated coconut, fresh or desiccated

1 tbsp oil

1/8 tsp turmeric


Poppu:

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/2 tsp urad dal

4-7 curry leaves

1 tbsp coriander leaves, chopped


In a pan on medium heat, put oil and all the poppu ingredients except curry leaves. When mustard seeds start popping, add the curry leaves, beans and mixed vegetables . Add salt and turmeric and pour little bit of water, cover with lid and let it steam cook the vegetables. When the vegetables are almost done, add the sprouts and saute for 1 minute. Just before taking off the stove, add coconut and coriander leaves, stir and enjoy with rice.
